Jeera Rice

Ingredients : 


 Basmati rice                  :  1 cup
Jeera (cumin seeds)        :  2 tsp 
Cashewnuts (optional)     :  
2 tbsp 
Green Chilies(chopped )  :  2no
Butter/Oil                       :  1tbsp
Salt                               :  to tase








Procedure : 

  • Wash the rice and soak in water for half an hour.
  • Heat Butter/Oil in a  rice cooker , add jeera and cashewnuts. Fry until brown. 
  • Add the rice , salt, water and stir. Cook until the rice is done.
  • Serve jeera rice hot with Mango Dal or any spicy curry.

Tomato Rice

INGREDIENTS :


 Rice : 2 cups
 Tomatoes juice : 2cups(grind tomatos )
 Onion  : 1(cut into slices)
 Green chilies : 4(slit)
 Turmeric  :  1/2 tsp
 Ginger &Garlic paste : 2tbsp
 Cloves  : 4
 Cinnamon  : 2no
 Cardamons  : 3
 Oil/ghee  : 3tbsp
PROCEDURE :
  

1. Wash and soak rice for 15 minutes in water. Drain water and keep it aside .

2. In a frying pan, add cloves, cinnamon, cardamon and fry for a minute,Add ginger & garlic to it, fry for a minute and add green chilies and onions Fry till onion turns light brown. Add tomato paste(juice)           .



3. Now add salt and turmeric to it. cook till raw smell of tomatos goes off(like 10 min)add rice to it and stir Now pour down 2 to 3 1/4 cups of water and cook in a rice cooker/ pressure cooker.

4. serve with aloo kurma.

Chicken Fried Rice

INGREDIENTS :

Basmati Rice - 2cups
Chicken - 1/2lb
Ginger Garlic paste - 2tbsp
Pepper powder - 1/2tsp
Chopped Carrots - 1/4(boiled)
Green Onions - 1/4cup(chopped)
Green chilis - 2no.
Bay leaves - 1no
Eggs - 2
Salt - to taste
Oil - 3tbsp

PROCEDURE :

1.. Wash and soak the Rice for a minimum 1/2 hour. In a pan, bring 7 cups of water to boil.Once boiling, add Bay Leaves,Salt and Oil (1tsp).

2. Add the washed Rice to boiling water.Once the Water starts boiling again, time and cook for 10 minutes (the Rice needs to be 3/4 way done). Drain the water from the Rice and keep aside.close with a tight lid

3. Heat a pan on medium heat, add in the Oil .once hot add marinated chicken (marinate chicken with ginger garlic paste, salt,lime juice,peper for 20 mins) and cook in a medium heat. after chicken is tender turn off the heat.

4.Heat the oil in another pan, add the boiled vegetables ,green chilies and salt, once cooked , Crack in eggs, stirring quickly to scramble eggs with vegetables.and ,add the fried chicken, cook for 10 min. tyurn off heat
5. Add  boiled rice and mix well.. preheat the oven to 350f and bake it for 10min... or place it in rice cooker and keep it warm for 10mins
5. Finally Garnish with chopped coriander..Serve with Raita

Vegetable Fried Rice

INGREDIENTS :

Green peas - 1/4 cup(boiled)
Chopped Carrots  - 1/4cup(boiled)
French Beans - 1/4cup(boiled)
Green Onions - 1/4cup(chopped)
Green chilis - 2no.
Bay leaves - 1no
Eggs - 2
Salt - to taste
Oil - 3tbsp

Coconut Rice

Ingredients:

Basmati rice - 3 rice cups 
Coconut milk - 4cups
Oil and Ghee or butter - 2 tbsp
Turmeric - one pinch
Mint & coriander leaves- handful
Salt - to taste

Whole cloves - 6 no,
 Cardamom - 4 no,
 Cinnamon stick - 2 inch,
 Bay leaf - 3 no.
Cashews - small handful
Green chillies - 5 no



Procedure:
 1.Take a wide pan which holds rice when u fry it. Heat on medium heat. When it is heated add whole spices,cashews and green chillies  fry  (keep it covered, otherwise oil will spill on you.)
2. Add coriander and mint leaves fry again on medium-low , {Mean while measure rice, wash it 3 times, discard water}

3.On medium heat add rice gently mix until water disappears.

4.Put these everything in Electric rice cooker. Add measured coconut milk,salt,turmeric powder mix and switch to cook.When it is finished cooking it goes to standby position, now switch it off. Please do not open the lid.  until you waited 30 mins  

5. Serve with aloo kurma or chicken kurma
NOTE : coconut rice comes out nice with sona masoori
